Day-to-day

Measure and weigh dry ingredients such as flour, sugar, and baking powder using scales to ensure recipe accuracy. Sift flour and other dry ingredients to remove lumps and aerate mixtures before combining with wet components. Knead and fold dough by hand or using a mixer to develop gluten structure for croissants, Danish pastries, and laminated products. Roll out dough to specified thickness using a rolling pin or pasta machine, maintaining even consistency across sheets. Cut pastry sheets into precise shapes using templates, cutters, and knives for individual pastries and tarts. Pipe filling, cream, or chocolate into pastries using piping bags and nozzles to achieve consistent appearance and portion control. Brush egg wash or milk wash onto unbaked pastries to develop colour and sheen during baking. Dust finished pastries with icing sugar, cocoa powder, or other toppings to meet product specification.

Requirements

The standard entry pathway requires a Certificate I or compulsory secondary education (ABS skill level 5). Specific qualification requirements vary by employer and state. Some employers may accept equivalent experience. Check yourcareer.gov.au for available courses and dewr.gov.au/skills-reform/free-tafe for subsidised training options.

The honest hard part

The work is repetitive, physically demanding, and poorly paid. You'll spend hours on your feet doing the same motions (rolling, piping, cutting) in hot kitchens. Progression to pastrycook requires years of experience and formal training. Most positions are early starts (3 to 4am) with few advancement options unless you move into management or open your own business.

Where the jobs are

Regional centres have fewer opportunities. Jobs are heavily weighted toward hospitality hubs and shopping centres. Remote work doesn't apply. Most positions are full-time in commercial bakeries or hotel kitchens rather than standalone patisseries.
